Blackened bananas. Not just overripe brown spotted bananas but straight up blackened bananas. I toyed with the idea of throwing them away but I had promised my hubby I would “make something” from the bananas so that they would not go to waste.
I was not in the mood for banana bread. Besides, I like to use 4-6 bananas for banana bread and I only had 2 on hand. Hmmm, what about pancakes? But I didn’t feel like using my flour, mostly because I start to get creative with my dry ingredients and add in oatmeal, bran, wheat germ and the like. Which obviously alters the way my baked goods come out.
I decided to keep it simple, well, simple for me.

Flourless Oatmeal Banana Pancakes
Approx 4 servings
Ingredients:
2 cups old fashioned oatmeal
2 overripe bananas
3 eggs
2/3 cup almond milk
1tsp baking soda
1 tsp vanilla extract
Coconut Oil (for greasing the griddle)
I put all the ingredients into a wide mouth quart mason jar and used a hand blend. You could also use a blender. You want to blend until everything is smooth. If your batter looks too thin for your taste, you can add in 1/3 cup of oatmeal, blending to combine the mixture till it is the consistency you desire. Keep in mind that the more liquidy the batter, the more crepe like consistency you will get.
Pour about 2-3 tbsp fulls onto a hot greased griddle. Cook on one side until bubbles stop appearing, about 3 minutes. Flip and cook on remaining side for one minute.
Serve immediately. You could use syrup, if you like or we like powdered sugar.
